Peler puis r\u00e2per la carotte.<\/p>\n<p>Concasser grossi\u00e8rement les noix.<\/p>\n<p>Pr\u00e9parer la vinaigrette en m\u00e9langeant huile d\u2019olive, moutarde et vinaigre.<\/p>\n<p>Dans un saladier, m\u00e9langer le chou rouge et la carotte avec l\u2019assaisonnement.<\/p>\n<p>Ajouter le persil cisel\u00e9, les noix concass\u00e9es et les graines de s\u00e9same.<\/p>\n<p>M\u00e9langer le tout. R\u00e9server 30 minutes au r\u00e9frig\u00e9rateur puis servir frais.<\/p>\n<p>Nous vous conseillons d\u2019utiliser une huile d\u2019olive go\u00fbt \u00e0 l\u2019ancienne de Provence &#8211; olives matur\u00e9es AOP pour sa douceur et ses ar\u00f4mes d\u2019olives noires, de fruits confits, de sous-bois et\/ou de pain grill\u00e9 qui se marient tr\u00e8s bien avec le chou rouge.<\/p>\n<p>Vous pouvez \u00e9galement utiliser une huile d\u2019olive de la Vall\u00e9e des Baux-de-Provence AOP &#8211;
