Amalgamer rapidement avec l\u2019huile d\u2019olive. Lier avec l\u2019\u0153uf et 1 \u00e0 2 cuill\u00e8res \u00e0 soupe d\u2019eau, pour obtenir une p\u00e2te ferme. Former une boule avec la p\u00e2te, recouvrir de film \u00e9tirable et laisser reposer au r\u00e9frig\u00e9rateur 1 h environ.<br \/>\nEtaler la p\u00e2te en un disque plus grand que la taille de votre moule puis la d\u00e9poser sur une plaque et r\u00e9server au frais.<\/p>\n<ul>\n<li>Pr\u00e9paration des pommes\u00a0:<\/li>\n<\/ul>\n<p>Faire fondre 25 g de beurre. Graisser le fond du moule \u00e0 manqu\u00e9 avec le beurre fondu m\u00e9lang\u00e9 \u00e0 1 cuill\u00e8re \u00e0 soupe d\u2019huile d\u2019olive sur toute la surface (fond et bords).<br \/>\nSaupoudrer g\u00e9n\u00e9reusement le moule de sucre en laissant le surplus dans le fond. R\u00e9server.<br \/>\nPeler les pommes, les couper en 2 et retirer les p\u00e9pins.<br \/>\nDans une po\u00eale, faire fondre une noix de beurre avec 50g de sucre et 50g d\u2019huile d\u2019olive.<br \/>\nFaire blondir et colorer les demies pommes. R\u00e9server le jus.<br \/>\nRanger harmonieusement les morceaux de pommes dans le moule en les serrant bien (face bomb\u00e9e au fond du moule).<br \/>\nCouvrir d&rsquo;un peu de sucre et d\u2019une cuill\u00e8re \u00e0 soupe d\u2019huile d\u2019olive. Ajouter un peu de sirop de cuisson (la pectine des pommes, contenue dans le sirop, contribue \u00e0 la tenue des pommes).<br \/>\nEnfourner pendant 20 minutes dans un four pr\u00e9chauff\u00e9 \u00e0 210\u00b0C. Sortir le plat du four et laisser refroidir 30 minutes environ.<br \/>\nPoser ensuite le disque de p\u00e2te. Rentrer le surplus de p\u00e2te sur les bords int\u00e9rieurs du moule.<br \/>\nRemettre \u00e0 cuire environ 40 minutes pour cuire la p\u00e2te et confire les pommes en surveillant la coloration (mettre un papier aluminium si la p\u00e2te brunit trop vite).<\/p>\n<p>Nous vous conseillons d\u2019utiliser une huile d\u2019olive go\u00fbt subtil de Nyons AOP pour sa douceur, son onctuosit\u00e9 et ses ar\u00f4mes de fruits secs, ainsi qu\u2019un go\u00fbt beurr\u00e9, accompagn\u00e9s \u00e9ventuellement d\u2019ar\u00f4mes de noisettes fra\u00eeches et\/ou d\u2019herbe fra\u00eechement coup\u00e9e.<\/p>\n<p>Vous pouvez \u00e9galement utiliser l\u2019une de ces huiles d\u2019olive AOP : Nice\u00a0 et Corse &#8211; Oliu di Corsica \u2013 r\u00e9colte \u00e0 l\u2019ancienne.<\/p>\n<\/div><div class=\"fusion-clearfix\"><\/div><\/div><\/div><\/div><\/div><\/p>\n","protected":false},"featured_media":6711,"menu_order":0,"template":"","class_list":["post-6630","ricette","type-ricette","status-publish","has-post-thumbnail","hentry"],"yoast_head":"<!-- This site is optimized with the Yoast SEO plugin v27.5 -
