Ajouter la farine tamis\u00e9e avec la levure chimique. Monter les blancs en neige mousseux et les incorporer d\u00e9licatement \u00e0 l\u2019aide d\u2019une maryse. Verser la p\u00e2te sur une feuille de papier cuisson sur la plaque du four sur un rectangle d&rsquo;au moins 25X30cm et lisser \u00e0 l&rsquo;aide d&rsquo;une spatule. Enfourner 12 minutes \u00e0 180\u00b0C jusqu&rsquo;\u00e0 ce que le biscuit soit bien dor\u00e9.<\/p>\n<p><strong>Pr\u00e9parer la ganache au chocolat noir :<\/strong><\/p>\n<p>Pendant que le biscuit roul\u00e9 cuit, casser le chocolat en morceaux et le faire fondre au bain-marie en remuant de temps en temps. Dans une autre casserole, porter la cr\u00e8me \u00e0 \u00e9bullition. \u00c9mulsionner le chocolat fondu, l\u2019huile d\u2019olive de Nyons AOP et la cr\u00e8me chaude : verser la cr\u00e8me en trois fois sur le chocolat en m\u00e9langeant vivement avec une maryse entre chaque ajout afin d\u2019obtenir une texture lisse.<\/p>\n<p><strong>Dresser le biscuit roul\u00e9 :<\/strong><\/p>\n<p>\u00c9craser grossi\u00e8rement les cr\u00eapes dentelles.<\/p>\n<p>Renversez le biscuit sur un papier cuisson et retirer le papier cuisson d\u00e9licatement. Verser la ganache au chocolat et en tartiner le biscuit jusqu&rsquo;\u00e0 2 cm du bord. Parsemer d\u2019\u00e9clats de cr\u00eapes dentelles. Enrouler le biscuit dans le sens de la longueur puis l\u2019enrouler bien serr\u00e9 dans du papier cuisson et r\u00e9server minimum 1h au frais.<\/p>\n<p><strong>Pr\u00e9parez le gla\u00e7age rocher :<\/strong><\/p>\n<p>Faire torr\u00e9fier les noisettes puis les concasser grossi\u00e8rement. Faire fondre le chocolat au bain-marie. Ajouter l\u2019huile et les \u00e9clats de noisette. Attendre quelques minutes que le gla\u00e7age refroidisse pour qu&rsquo;il ne soit pas trop liquide. Placer la b\u00fbche roul\u00e9e (bien refroidie) sur une grille au-dessus d&rsquo;un plateau recouvert d&rsquo;un film ou d\u2019un papier cuisson.<\/p>\n<p>Verser le gla\u00e7age et bien le laisser couler sur les c\u00f4t\u00e9s. Si besoin, r\u00e9cup\u00e9rer l\u2019exc\u00e9dent et verser une 2<sup>\u00e8me<\/sup> couche de gla\u00e7age. Transf\u00e9rer la b\u00fbche roul\u00e9e gla\u00e7age rocher sur un plat de service et faire prendre le gla\u00e7age pendant 30 minutes \u00e0 temp\u00e9rature ambiante ou au frais avant de servir.<\/p>\n<p><strong>Quelle huile d\u2019olive AOP pour cette b\u00fbche ?<\/strong><\/p>\n<p>Nous vous conseillons d\u2019utiliser une huile d\u2019olive go\u00fbt subtil de Nyons AOP pour ses ar\u00f4mes de fruits secs, de beurre, de noisette, de pomme verte et d\u2019herbe fraichement coup\u00e9e.<br \/>\nVous pouvez \u00e9galement utiliser une huile d\u2019olive de Nice AOP ou du Languedoc AOC.<\/p>\n<\/div><\/div><\/div><\/div><\/div><\/p>\n","protected":false},"featured_media":16000,"menu_order":0,"template":"","class_list":["post-15999","ricette","type-ricette","status-publish","has-post-thumbnail","hentry"],"yoast_head":"<!-- This site is optimized with the Yoast SEO plugin v27.6 -
