M\u00e9langer le miel, le vinaigre balsamique et 1 cuill\u00e8re \u00e0 soupe d\u2019huile d\u2019olive d&rsquo;Aix-en-Provence &#8211; olives matur\u00e9es AOP. Poser les figues dans un plat \u00e0 r\u00f4ti, verser le m\u00e9lange miel \/ vinaigre \/ huile d\u2019olive dessus. Enfourner 10 minutes.<\/p>\n<p>Faire revenir les magrets 4 \u00e0 5 minutes c\u00f4t\u00e9 peau puis 2 \u00e0 3 minutes c\u00f4t\u00e9 viande. R\u00e9server.<\/p>\n<p>Faire l\u00e9g\u00e8rement chauffer 2 cuill\u00e8res \u00e0 soupe d\u2019huile d\u2019olive dans un faitout, ajouter la farine et faire cuire en remuant pendant 3 minutes.<\/p>\n<p>Mouiller ensuite ce roux blond avec le bouillon de volaille et porter \u00e0 \u00e9bullition.<\/p>\n<p>Ajouter la viande taill\u00e9e en morceaux, le vin rouge, le sel, le poivre et le piment d\u2019Espelette. Continuer de faire chauffer sans cesser de remuer.<\/p>\n<p>D\u00e9layer \u00e0 part les jaunes d&rsquo;\u0153ufs avec la cr\u00e8me fra\u00eeche dans un bol, puis verser cette liaison dans le faitout en remuant. Rajouter les olives noires et les figues. Faire chauffer sans bouillir pendant 5 minutes.<\/p>\n<p>Faire chauffer les vol-au-vent pr\u00e9cuits dans le four \u00e0 180\u00b0C. Lorsqu&rsquo;ils sont bien chauds et tr\u00e8s secs, les sortir et enlever les chapeaux, remplir de la garniture en sauce et reposer les chapeaux. Servir aussit\u00f4t accompagn\u00e9 d\u2019une salade verte.<\/p>\n<p><strong>Quelle huile d\u2019olive AOP pour ces vol-au-vent ?<\/strong><\/p>\n<p>Nous vous conseillons d\u2019utiliser une huile d\u2019olive go\u00fbt \u00e0 l&rsquo;ancienne d\u2019Aix-en-Provence &#8211; olives matur\u00e9es AOP pour ses ar\u00f4mes de pain au levain, olive noire, cacao, artichaut cuit vanille et pain grill\u00e9.<br \/>\nVous pouvez \u00e9galement utiliser l\u2019une de ces huiles d\u2019olive AOP : Vall\u00e9e des Baux-de-Provence, Corse \u2013 Oliu di Corsica en r\u00e9colte l\u2019ancienne ou de Provence.<\/p>\n<\/div><\/div><\/div><\/div><\/div><\/p>\n","protected":false},"featured_media":15879,"menu_order":0,"template":"","class_list":["post-15878","ricette","type-ricette","status-publish","has-post-thumbnail","hentry"],"yoast_head":"<!-- This site is optimized with the Yoast SEO plugin v27.4 -
