Ingredients for 4 people:<\/h4>\n
    \n
  • 400 g penne pasta<\/li>\n
  • 4 good-size tomatoes (or 400 g peeled tomatoes)<\/li>\n
  • 2 small chilli peppers<\/li>\n
  • 2 garlic cloves<\/li>\n
  • PDO huile d\u2019olive de Haute-Provence<\/li>\n
  • 80 g Pecorino Romano cheese<\/li>\n
  • Parsley<\/li>\n
  • Salt<\/li>\n<\/ul>\n<\/div>

    Preparation:<\/h4>\n

    Scald the tomatoes for 1 minute then remove the skin (which will come off on its own). Coarsely chop the tomatoes.<\/p>\n

    Peel the garlic cloves then coarsely crush them with the blade of a knife.<\/p>\n

    In a frying pan, quickly saut\u00e9 the garlic cloves in a little olive oil and add the finely chopped chilli pepper.<\/p>\n

    Add the tomatoes and cook until the sauce has thickened. Add salt. In the meantime, cook the penne pasta in a saucepan of salted boiling water. Drain the pasta when al dente <\/em>and pour it directly into the sauce.<\/p>\n

    Add a good handful of chopped parsley, 1 tablespoon olive oil and saut\u00e9 the pasta for one minute.<\/p>\n

    Serve the penne pasta all\u2019arrabbiata in a deep plate and sprinkle with grated Pecorino.<\/p>\n

    We advise you to use an intense-flavoured PDO olive oil from Haute-Provence for its aromas of raw artichoke, banana, grass, apple and fresh almond, and its bitterness and strength, which will give the pasta a unique and distinctive flavour.<\/p>\n

    You can also use one the following PDO olive oils: Vall\u00e9e des Baux de Provence, N\u00eemes, Aix-en-Provence, Corse – Oliu di Corsica.<\/p>\n<\/div>
