Den Sellerie kleinschneiden und die Selleriebl\u00e4tter aufbewahren.\u00a0<br \/>\nDas Fleisch in gro\u00dfe St\u00fccke schneiden und beiseite legen. Aus den Selleriebl\u00e4ttern, der Petersilie und dem Lorbeer ein Kr\u00e4uterstr\u00e4u\u00dfchen binden.\u00a0<br \/>\nIn einen tiefen Topf mit reichlich nativem Oliven\u00f6l extra Colline Salernitane DOP die Zwiebeln, den Sellerie und die Karotten geben und einige Minuten bei geringer Hitze ziehen lassen.\u00a0<br \/>\nDann das Fleisch, das Kr\u00e4uterstr\u00e4u\u00dfchen und eine Prise Salz unter R\u00fchren hinzugeben. Bei geringer Hitze zugedeckt mindestens drei Stunden garen lassen und gelegentlich kontrollieren.\u00a0<br \/>\nNach drei Stunden Garzeit den Wein hinzuf\u00fcgen, die Kr\u00e4uter entfernen und die Hitze unter R\u00fchren erh\u00f6hen.\u00a0<br \/>\nDie Genovese ohne Deckel noch etwa eine Stunde lang weitergaren, h\u00e4ufig umr\u00fchren und mit dem Wein begie\u00dfen, wenn der Topfboden trocken wird. Dann ein St\u00fcck Fleisch herausnehmen, zerkleinern und beiseite legen.\u00a0<br \/>\nDie gebrochenen Ziti in kochendem Salzwasser garen, abgie\u00dfen und mit der Genovese-Sauce vermengen.
