In der Zwischenzeit auf beiden Seiten der Entenbrust die Haut mehrmals diagonal mit\u00a0einem\u00a0Messer anschneiden. Das Fleisch beidseitig mit \u00d6l, Salz, Pfeffer und Rosmarin einreiben. Das Fleisch mit der\u00a0Haut nach unten\u00a0in eine Pfanne geben und ca. 3 Minuten garen lassen. Die Ente umdrehen und f\u00fcr ein paar Minuten\u00a0anbraten. Die Ente wieder\u00a0auf die Haut legen und mit der H\u00e4lfte des Weins abl\u00f6schen, bis der Alkohol verdunstet ist.\u00a0Die Ente auf der Hautseite in eine\u00a0warme Auflaufform legen.
