In der Zwischenzeit die Eigelb und die H\u00e4lfte des Zuckers mit einem Schneebesen verr\u00fchren. Die geschmolzene Schokolade und das natives Oliven\u00f6l extra HUILE D&#8217;OLIVE DE N\u00ceMES AOP unter st\u00e4ndigem R\u00fchren hinzuf\u00fcgen.<br \/>Den restlichen Zucker auf ca. 80 \u00b0 C erhitzen, bis der Zucker zu Sirup wird. Das Eiwei\u00df zu Eischnee schlagen und den geschmolzenen Zucker beimengen. Weiter verr\u00fchren, bis die Mischung glasig gl\u00e4nzt. Das Eiwei\u00df zur Schokoladenmasse geben und vorsichtig einarbeiten.<br \/>Die Mousse in kleine Gl\u00e4ser f\u00fcllen und im K\u00fchlschrank mindestens zwei Stunden abk\u00fchlen lassen.
