Zucker und Eigelb mit einem elektrischen R\u00fchrbesen schlagen, dann die Maisst\u00e4rke und die lauwarme Milch langsam einr\u00fchren.<br \/>\nDie Creme in einen Topf geben und bei schwacher Hitze unter st\u00e4ndigem R\u00fchren eindicken lassen. Dann die Creme in einen Beh\u00e4lter gie\u00dfen, mit Frischhaltefolie abdecken und abk\u00fchlen lassen.<br \/>\nJetzt den Brandteig zugereiten: In einem Topf Wasser, \u00d6l und Salz zum Kochen bringen. Wenn das Wasser kocht, vom Herd nehmen und das Mehl schnell hineinr\u00fchren, sodass keine Klumpen entstehen.<br \/>\nDen Brandteig nun wieder aufs Feuer stellen bis sich die klassische wei\u00dfliche Patina am Topfboden bildet. Den Teig abk\u00fchlen lassen.<br \/>\nWenn der Teig kalt ist, die Eier einzeln mit einem Holzl\u00f6ffel darunterr\u00fchren. Der Teig muss weich, glatt und gl\u00e4nzend sein.<br \/>\nDen Teig in einen Beutel mit Sternt\u00fclle f\u00fcllen und Kringel auf einem mit Backpapier ausgelegten Backblech formen. Die Zeppole im vorgeheizten Ofen bei zun\u00e4chst 10 Minuten bei 220\u00b0, dann nochmal 15 Minuten bei 200\u00b0 und schlie\u00dflich weitere 10 Minuten bei 180\u00b0 backen.
