In einer Schale Eigelb verquirlen, salzen, pfeffern und mit Piment d\u2019Espelette g.U. w\u00fcrzen. Die kochende Milch-Sahne-Mischung unter st\u00e4ndigem Schlagen in einem d\u00fcnnen Strahl \u00fcber das Eigelb gie\u00dfen.
